Spinache-cheese muffins

  • 1 tbsp butter
  • 1 small onion, chopped
  • 1 garlic clove, minced
  • 2 eggs
  • 1/2 cup cottage cheese
  • 1/2 cup shredded Mozzarella cheese
  • 1/2 cup grated Romano cheese
  • 1 pkg frozen spinache, defrosted and squeezed well.
  • 1/4 tsp salt
  • pinch of pepper
  • 1/2 cup instant oats
  • 1/4 cup skimmed milk

In a small pan, saute the onions in the butter for 5 minutes. Add the garlic, and saute for another minute. Set aside to cool.

Mix all the ingredients together with the cooled sauted onions and garlic.

Put into 12 lightly greased muffin tins and bake in a moderate oven (180 deg) for 20-25 minutes.
