Beef n veggie mini meat loaves

  • 1/2 cup oats
  • 1/2 kg  ground beef
  • 1 cup grated carrots
  • 1 cup grated zucchini
  • 1 cup finely chopped cabbage
  • 3 cloves garlic
  • 1 egg
  • 3 tbsp vegetable oil
  • 4 tbsp ketchup
  • 3 tsp balsamic vinegar
  • 1/4 cup chopped parsley
  • 1/4 cup grated Romano cheese
  • 1 tsp dried oregano

note: ketchup and balsamic vinegar can both be substituted by 6 tbsp of barbecue sauce

Saute the vegetables with the garlic and oil, in a saucepan for 3 minutes, until just wilted, then set aside to cool down.

In a bowl, mix 2 tbsps ketchup, 2 tsps balsamic vinegar, the parsley, egg, cheese and oregano.

Add the beef and oats, and mix well. Add the vegetables after they have cooled, and mix.

Form into 12 balls and put into  greased cupcake tins. Brush with the remaining ketchup and balsamic vinegar.

Insert into a preheated 180 deg. oven for 30-35 minutes
